Freezing Summeripe Stone Fruit using this step by step guide will make it easy to enjoy delicious Summeripe peaches and nectarines all year long. With a little preparation Summeripe peaches & nectarines freeze really well and then can be tossed into smoothies, desserts, and other stone fruit recipes at a later date. Frozen Summeripe peaches are also great plain -- set aside a batch to munch on when you have a sweet craving.

Ingredients
  1. 4 Summeripe Peaches or Nectarines (4 Summeripe Peaches fit nicely onto a standard sized baking sheet but you can freeze as many Summeripe Peaches & Nectarines as you wish!)
Instructions
  1. 1. Cut wax or parchment paper to cover your baking sheet. Using wax or parchment paper will help to keep the frozen fruit from sticking to the baking sheet.
  2. 2. Slice the fruit, try to slice the fruit into similar sized slices to ensure the fruit will freeze equally. We like to leave the skin on the fruit but you may also remove the skin if you wish
  3. 3. Carefully place the fruit slices onto the wax paper lined baking sheet. Do not let the fruit touch each other, this will help to avoid large clumps of frozen fruit.
  4. 4. Place the fruit slices & baking sheet into the freezer and allow to freeze for about 24 hours or until fruit slices are completely frozen
  5. 5. Once completely frozen, remove fruit for freezer and place into a large freezer bag and thoroughly seal the bag.
  6. 6. Store the bag of frozen fruit in the freezer and enjoy Summeripe Stone Fruit all year long!

Ingredients
  1. 10 Summeripe Yellow Peaches, skinned, pitted, and cut into small slices
  2. 1/4 cup plus 2 tablespoons brown sugar
  3. 1 small loaf pound cake, may substitute angel food cake
  4. 8 scoops of vanilla ice cream
  5. *1 Tablespoon Summeripe White Peach Dessert Sauce, room temperature to slightly warm
  6. *Small Handful of Summeripe Nectarine Glazed Walnuts, chopped
Instructions
  1. Preheat oven to 400 degrees
  2. Place sliced peaches into a large bowl. Add brown sugar and stir until coated. Single layer the peaches onto a large cookie sheet or two small cookie sheets.
  3. Roast in preheated oven for 20 minutes or until softened and slightly browned.
  4. Slice pound cake into 8 slices and place onto 8 individual plates, top with warm roasted peaches, dividing peaches evenly.
  5. Place a scoop of vanilla ice cream on top of peaches and spoon Summeripe White Peach Dessert Sauce evenly over ice cream and sprinkle with Summeripe Nectarine Glazed Walnuts and enjoy!

  1. Preheat the broiler on high and position a rack about 6 inches from the heat.
  2. In a large bowl, toss the Summeripe Peaches with the brown sugar and scrape them onto a rimmed baking sheet.
  3. Broil the Summeripe Peaches for about 15-20 minutes, flipping them halfway through, until caramelized and roasted. Let the Summeripe Peaches cool slightly before serving with a few scoops of ice cream.

Ingredients
  1. 3 Summeripe Nectarines, skinned, quartered and pitted
  2. 2 tablespoons apple cider vinegar
  3. 2 tablespoons fresh lemon juice
  4. 2 tablespoons champagne vinegar
  5. 2 tablespoons sherry vinegar
  6. 2 tablespoons agave or honey
  7. 1/2 teaspoon salt
  8. 1/8 teaspoon cayenne pepper
  9. 6 tablespoons extra virgin olive oil
Instructions
  1. To make the Summeripe Nectarine Nectar place Summeripe Nectarines and apple cider vinegar into a blender and purée. Place a fine mesh strainer over a wide mouth jar or bowl. Pour puree mixture the mesh strainer to remove nectarine solids. To speed up the straining process, press mixture with the back of a large table spoon. Discard puree solids from the strainer, pour the nectarine nectar into the blender. Yields about 1/2 cup of nectar.
  2. Finish the dressing by adding lemon juice, champagne and sherry vinegar, agave (or honey), salt, and cayenne pepper to the Summeripe Nectarine nectar and blend.
  3. Add olive oil and blend until smooth.
  4. Pour over your favorite salad greens and store Summeripe Nectarine Nectar Salad Dressing in the refrigerator.
Notes
  1. Remove the skin for an extra smooth salad dressing or leave the skin on to create a thicker salad dressing consistency

Ingredients
  1. 2 pounds fully ripe Summeripe Yellow Peaches
  2. 10 oz. (1 package) frozen red raspberries
  3. 6 cups sugar
  4. 1/2 bottle liquid fruit pectin or 1 package Certo
  5. 1/4 cup lemon juice, about 2 medium lemons
Instructions
  1. Peel, seed, and grind about 2 lbs. fully ripe peaches.
  2. Thaw 1 (10 oz) pkg. frozen red raspberries. Once thawed, measure raspberries and add enough ground peaches to make 4 cups prepared fruit.
  3. Squeeze juice from 2 medium lemons or ¼ cup lemon juice into fruit mixture then add 6 cups sugar.
  4. Place fruit mixture on heat; bring to full roiling boil and boil hard 1 minute; stirring constantly.
  5. Remove from heat, immediately stir in ½ bottle liquid fruit pectin or one package of Certo.
  6. Skim off foam, then stir and skim 5 minutes to cool slightly and prevent floating fruit.
  7. Ladle quickly into jars.

Ingredients
Summeripe Nectarine and Ahi Tuna Mixture
  1. 3 Summeripe Yellow Nectarines (or peaches), cubed and pitted
  2. 1.5 pounds fresh Ahi tuna, cubed
  3. 2 avocados, diced
  4. 4 green onions, thinly sliced
  5. 1 handful fresh cilantro, chopped
  6. 1 tablespoon black sesame seeds
  7. Coarse salt to taste
Marinade for Summeripe Nectarines & Ahi Tuna
  1. 4-5 tablespoons seasoned rice vinegar
  2. 3 tablespoons fresh lime juice
  3. 2 tablespoons toasted sesame seed oil
  4. 2 teaspoons grated fresh ginger (or minced ginger)
  5. 2 teaspoons lime zest
  6. 1 Serrano chili pepper, minced
  7. 1 teaspoon prepared wasabi paste
  8. Coarse salt to taste
Salad Greens
  1. 4 cups salad greens, mix of arugula and spring greens
  2. 2 tablespoons seasoned rice vinegar
  3. 1 tablespoons toasted sesame seed oil
  4. Coarse salt to taste
Directions
  1. To prepare the marinade, combine lime juice, rice vinegar, ginger, lime zest, Serrano chili pepper and salt into a medium bowl, stir together. Whisk in toasted sesame seed oil and salt. Cube Ahi tuna, add to marinade, stir gently. Set aside.
  2. In a large bowl, combine Summeripe nectarines, green onions, cilantro, and mix together. Add diced avocados, tuna, and the tuna dressing and stir to mix.
  3. For salad dressing, whisk together 2 tablespoons seasoned rice vinegar and sesame seed oil in a small bowl.
  4. Place salad greens into a large bowl and drizzle vinegar and oil mixture onto salad greens, toss to coat.
  5. Assemble salad by dividing salad greens onto 6 plates and top with nectarine and ahi tuna. Sprinkle black sesame seeds and season with coarse salt to taste.

Ingredients
For the Crust
  1. 1 cup blanched almonds
  2. 1 cup coconut flakes
  3. ¼ cup sugar
  4. ¼ cup butter, cut into small pieces
For the Filling
  1. 3 cups Summeripe Yellow Peaches, thinly sliced
  2. 1 cup + 1 Tablespoon sour cream
  3. ½ cup whipping cream
  4. 6 Tablespoons powdered sugar (4 for sour cream, 2 for whipping cream)
  5. 1 teaspoon orange juice
  6. 1 teaspoon shredded orange rind
  7. 1 teaspoon vanilla
  8. Dash of salt
Directions
For the Crust
  1. Preheat oven to 375 degrees
  2. Grind almonds medium fine then mix with coconut flakes
  3. Work in sugar and butter with fingers into the almond & coconut mixture
  4. Once evenly mixed, remove 3 Tablespoons of crust mixture to be toasted in a separate pie pan
  5. Press remaining crust mixture evenly in bottom and sides of 9” glass pie plate
  6. Place both pie plates into oven, remove topping mixture when toasted, about 5 minutes, and continue to bake crust until golden brown about 10-12 minutes
For the Filling
  1. Beat sour cream, salt, orange juice, orange rind, vanilla, and 4 Tablespoons powdered sugar
  2. Spread sour cream mixture on bottom and sides of the baked crust and cover with Summeripe Peaches
  3. Whip cream then fold in remaining 2 Tablespoons powdered sugar.
  4. Cover the Summeripe peaches with the whipped cream
  5. Sprinkle toasted coconut mixture on top, chill, and enjoy!

  6. 6 oz of Summeripe Peach infused vodka, may substitute peach schnapps or any peach flavored vodka)
Instructions
  1. Add in Summeripe Yellow Peach slices and Summeripe Yellow Nectarine slices into the bottom a pitcher or jar
  2. Cut lemon in half and juice one half of the lemon into the pitcher. Thinly slice the remaining half of the lemon for garnishing
  3. Add raw cane sugar, white wine, and Summeripe Peach Infused Vodka into the pitcher.
  4. Let the pitcher chill for at least 2 hours, we like to chill our sangria overnight.
  5. Serve chilled and garnish with a slice of a Summeripe Peach, Nectarine and lemon. Don't forget to enjoy responsibly!
To make Summeripe Peach Infused Vodka
  1. Slice a very ripe Summeripe Peach into a jar, add in 1 cup of vodka. Keep vodka and peaches covered in the refrigerator for 2-3 days.
