Ingredients
  1. 3 to 4 very ripe Summeripe White Peaches (may substitute Summeripe White Nectarines)
  2. 1 lime, sliced into 4 wedges
  3. 2 oz white rum
  4. 1 oz simple syrup
  5. handful of fresh mint leaves
  6. splash of lemon-lime soda or sparkling water
  7. ice cubes
Directions
  1. Slice Summeripe White Peaches over a cocktail shaker to capture all of fruit juice.
  2. Place Summeripe White Peach slices into the cocktail shaker and muddle until slices are thoroughly juiced. Set aside.
  3. Place mint leaves and 1 lime wedge into a sturdy glass, use a muddler to crush mint leaves and lime wedge.
  4. Strain Summeripe White Peach juice into the glass and add in simple syrup and 2 more lime wedges, muddle again to release all of the lime juice.
  5. Fill the glass with ice cubes. Pour rum over the ice cubes then fill the rest of the glass with lemon-lime soda or sparkling water. Gently stir all ingredients together.
  6. Garnish with a Summeripe White Peach slice and lime wedge.
For Simple Syrup
Ingredients
  1. 2 cups sugar
  2. 2 cups water
Instructions
  1. In a small sauce pan, dissolve sugar into water over low heat, stirring occasionally
  2. The simple syrup can be stored in a jar with a lid for 1-2 months in the refrigerator

  1. 1 shot=1.5 ounces
  2. Drink a glass of water in between cocktails, having a glass of water will not only keep you hydrated but help to create a more enjoyable drinking experience

Ingredients
  1. 1/2 cup Summeripe peach puree, approx. 2 Summeripe peaches, skin removed, sliced & pitted
  2. 1/4 cup honey or agave nectar
  3. 2 tablespoons coconut oil
  4. 1 cup old fashion oats (not quick cooking)
  5. 1/2 cup quinoa, rinsed and drained
  6. 1/2 cup pumpkin seeds
  7. 1/2 cup sliced almonds
  8. 1/4 cup flax seeds
  9. 1/4 cup brown sugar
  10. 1 teaspoon salt
  11. 1/4 teaspoon cinnamon
  12. Pinch ground ginger
Directions
  1. Preheat oven to 300 degrees.
  2. Place peach slices into a blender and puree until smooth. (Tip-Slicing peaches over the blender will help capture all the peach juice)
  3. In a small bowl combine peach puree, honey or agave nectar and coconut oil, whisk until blended. Set aside.
  4. In a medium bowl combine and mix all dry ingredients.
  5. Add the peach puree mixture to the dry ingredients and toss to coat.
  6. Line a 11x16 baking sheet with parchment paper, evenly spread granola mixture onto parchment paper. Bake for 45 minutes or until golden brown. Remove from oven and let cool for 30 minutes.
  7. Once cooled, break crisp granola into bite size pieces, store in an air tight container/jar.

Ingredients for "Peacho" de Gallo
  1. 3 Summeripe peaches, diced
  2. 3 roma tomatoes, diced
  3. 3 green onions, thinly sliced
  4. 2 serrano chili peppers, minced, may substitute jalapeño, Fresno or Anaheim chili pepper
  5. 2 fresh limes, juiced
  6. 2 large garlic cloves, minced (optional)
  7. 1 cup yellow onion, finely diced
  8. 1 handful cilantro, minced
  9. salt to taste
Directions
  1. Combine diced Summeripe peaches, diced tomatoes, yellow onion, green onions, serrano chili peppers, cilantro, and garlic into a medium sized bowl. Gently stir ingredients.
  2. Add in lime juice and salt to taste and gently stir ingredients.
  3. Serve immediately with tortilla chips, grilled fish, chicken, pork, or beef and enjoy!
